Wines made from Shiraz are often quite powerfully flavoured and full-bodied. The variety produces wines with a wide range of flavor notes, depending on the climate and soils where it is grown, as well as other viticultural practices chosen. Aroma characters can range from violets to berries, chocolate, espresso and black pepper. No one aroma can be called typical though blackberry and pepper are often noticed. With time in the bottle these primary notes are moderated and then supplemented with earthy or savory tertiary notes such as leather and truffle. Secondary flavor and aroma notes are those associated with several things, including winemakersâ€™ practices, and terroir.

Food Pairing: Pairs well with grilled and barbecued meats, pork and venison, or fish and poultry that are very light on sauces. Nice with a hunk of rustic bread and olive oil.

Our proximity to the Pacific Ocean and the consistent afternoon flow of cool Templeton Gap breezes allows our Syrah to achieve characters of both a warm and cool climate. Seeking finesse over power, the fruit was hand picked in September at ideal ripeness and treated gently, including multiple hand sorting and whole berry fermentation. The resultant wine is balanced, complex, and pure, just as we wanted it.

The nose speaks of rich, juicy plums highlighted by baking spices, licorice and sweet ginger notes. The palate is round and balanced with good weight that avoids being heavy. Flavors mirror the aromas, with dark fruits taking center stage. To sum it up clearly, Fiery Nights is a wine with old world class and new world sass.

Our Syrah was destemmed, and the cap punched down in small open top fermentation bins over a two week period. The barrels were 25% new oak, and this blend was finalized in October 2006. The wine was not fined, but was filtered before bottling on December 7, 2006.
