Our handpicked grapes are fermented in small lots and carefully pressed so that the skins are removed in time to prevent bitterness. The wine is settled before it is drawn into sixty-gallon French oak barrels. The imported oak imparts a softer, blended flavor to the wine. After aging, the wine is settled, lightly filtered to remove any solids, and bottled.
