Pinot Noir

Pinot noir is a red wine grape variety of the species Vitis vinifera. The name may also refer to wines produced predominantly from pinot noir grapes. The name is derived from the french words for pine and black alluding to the varietals tightly clustered dark purple pine cone shaped bunches of fruit.

Pinot noir grapes are grown around the world, but the grape is chiefly associated with the Burgundy region of France. In De re rustica, Columella described a grape variety in Burgundy in the 1st century A.D. that sounds like Pinot noir. It is widely considered to produce some of the finest wines in the world, but is a difficult variety to cultivate and transform into wine.

Well structured with acid and tannins, this wine exhibits earthy tea tones and soft sweet leather spices, balanced with an abundance of dried strawberries and black cherries. Aged in 30% new French oak and the remainder in used French oak. Medium bodied mouth feel. This wine is dry and also made for food.

She is one tasty treat, full of pomegranates, blueberries, currants and just a note of hibiscus flowers. Janey says this would be the wine she would choose to have in a desert isla ...morend scenario. A Hummer wrapped in a juicy berry pie, big, powerful and a touch obnoxious. The vineyard is just a stones throw for the tiny one store town of Comptche, 40 minutes north of the Savoy Vineyard and at a slightly higher elevation. The 2004 is comprised of 5 different clones from two different sections of the vineyard. The clones aid in the complexity and overall richness of the wine. She was aged in new and seasoned French Oak barrels for 11 months. Bottled unfiltered and unfined. Best enjoyed on the night of a full moon. 160 cases produced.

Our gentle crushing and minimum pressure basket pressing, both pr ...moreimary and malolactic wild yeast fermentations, aging in 100% premium French oak barrels (33% new), are all followed by unfined and unfiltered bottling.

Aromas arise of dark fruits, cedar wood, savory spice, and smoky blackstrap molasses. The palate follows the nose with deeply intense initial dark fruit blast. Really deep, rich mid-palate adds layers of roast India savory spices, trailing into a long, luxurious dark fruit finish. The aroma absolutely expands with a little time in the glass.

The Edna Valley Vineyard 2005 Pinot Noir was a labor of love. We began by cold soaking the hand-picked fruit for 2 days at 55° F. Yeast was added at the end of the cold soak, and t ...morehe wine fermented in open-topped tanks until dryness. The cap was irrigated at intervals with gentle pump-overs, and submerged completely by one rack and return daily. After the tank was drained, malolactic fermentation occurred in barrel. A single racking was done in December to remove heavy lees from the barrel.

Flavors and aromas were ext ...moreracted during pumpovers, after which the wine was moved to French oak barrels for nine months of aging.This wine is a deep ruby-purple color. The nose combines blackberry, plum, sweet cigar tobacco, hazelnut and earth with floral and rose notes. On the palate, the wine is rich and silky with flavors of ripe red fruit, wet earth and spice at mid-palate. The fine-grained tannins are luscious and broad, with balanced acids that lead to a long finish of fresh blackberries, cherry and vanilla. Enjoy this delicious wine with roasted pheasant or quail, rabbit terrine or rich pasta dishes.
