Just five miles from the Pacific Ocean, Edna Valley Vineyard has one of the longest and coolest growing seasons in California. Its location in one of the state's few east/west-oriented valleys allows nighttime coastal fog to move inland, cooling the grapes after a long day in the sunlight, so that they slowly mature while retaining sufficient acidity. The vineyard's unique site consists of layers of clay and volcanic rock over ancient ocean subsoil.

The Edna Valley Vineyard 2005 Pinot Noir was a labor of love. We began by cold soaking the hand-picked fruit for 2 days at 55° F. Yeast was added at the end of the cold soak, and ... morethe wine fermented in open-topped tanks until dryness. The cap was irrigated at intervals with gentle pump-overs, and submerged completely by one rack and return daily. After the tank was drained, malolactic fermentation occurred in barrel. A single racking was done in December to remove heavy lees from the barrel.

As is typical of good Chardonnays, we use techniques like 100% barrel fermentation, malolactic fermentation (44%), lees stirring and use of new oak barrels (65%). We cold stabilized and filtered the wine prior to bottling.This wine is intended to be our most intensely flavored Chardonnay, with concentrated grape flavors of peach and citrus, enhanced by lots of smoky oak and vanilla from new French barrels and mellow, caramel and hazelnut flavors from malolactic fermentation. The wine is round on the palate and long in the finish, with a crisp acidity that keeps it from being cloying. This lovely wine is the perfect accompaniment to crab cakes with lemon aioli, fresh cooked lobster and crispy roasted chicken.
