After 36 hours of cold maceration, th ...moree fresh Cabernet juice (saigniÃ©e) was bled off and fermented separately in stainless steel. The wine was fermented naturally and finished with Â½ percent residual sugar. It has a very fresh Cabernet bouquet with flavors that â€œdanceâ€ in the mouth. Light, but with the undertones of serious Cabernet fruit, this wine is excellent with light fare at the beginning of a meal or simply to sip on its own.

Shortly after the Mariafeld clone Pinot from the Mission Ranch was crushed and put into 1Â½ ton open-topped fermenters, juice was drawn off the skins and put into two neutral-oak b ...morearrels. The pink wine was then fermented completely dry and bottled after only seven months.

This Rose is a lovely shade of coral. In the nose, subtle aromas of orange oil, caraway seed, and cherries give way to a rich mid-palate full of flavor and a dry, persistent finish with great food-pairing acidity. Just over 40 cases of this wine were produced.
