2005 Chairman’s Club Cabernet Sauvignon/Carmenère Sonoma County
Very limited in production, the 2005 Chairman’s Club Cabernet Sauvignon/Carmenère is a marriage of two Bordeaux varieties which captures Chalk Hill Estate’s unique personality and terroir. The Carmenère is grown on a tiny, low vigor site with extremely rocky soils, perfect to harness its vigorous tendency. Hand-harvested at a mere one-half ton per acre, the Carmenère was co-fermented on skins with a low-yielding Cabernet Sauvignon vineyard. Deep, dark aromas of black plum and cassis accompany graphite and exotic asian spices. This age-worthy cuvee is opulent in texture, with blackberry fruit, black olive and tobacco flavors. The lingering finish is reminiscent of dark chocolate and mocha, pairing deliciously with roasted meat dishes and artisan cheeses. |
