2007 Rosé
Each year we bleed off (siphoning it out of the must using a commercial kitchen sieve) a bit of Purisima Mountain Grenache to make our dry rose. It ferments in a little 300 liter stainless steel tank along with the whites to dryness in the cold room. Just before bottling we add back in some of the Grenache from barrel to give the wine its distinctive color and seriousness. The upshot is a rose wine that is structured, has a bit of tannin, and is a perfect springtime picnic wine. |
