When bottled, our Merlot was awkward and tough, with somewhat hard tannins. It has since lost that rustic character and is now full-flavored with intriguing high-tone berry and cedar aromas. On the palate it shows classic earthy tones, with a touch of mint and herb. Still, the wine is not for the faint-of-heart, and is best enjoyed with a meal of hearty foods.
