Mercury Rising Blanc is the
proprietary name of Cinnabar’s
edgy white wine blend. Starting
with flavorful fruit from
exceptional vineyards, we aim to
produce a crisp, enchanting
wine with a hint of grassiness
that is free from the dominance
of toasted oak barrels or
malolactic fermentation.
Enjoy fragrances of grapefruit, Meyer lemon peel, pineapple, white peach,
orange blossom, wet stones and a whisper of grassiness. The flavor profile
shows complex citrus, kiwi and minerals with a structure of bright acidity.
The long finish will complement deep fried calamari, shrimp with spicy
cocktail sauce, or grilled salmon.
